On days when I want to whip up something quick yet satisfying, my go-to is a stir fry. The great thing about stir fry is that it’s highly customizable with whatever you have in the fridge. Once you master the basic method, the variations are endless. Today, I want to share my quick Chicken Stir Fry with Bell Pepper and Mushroom recipe. The combination of bell peppers and mushrooms is one of my personal favorites because the flavors complement each other beautifully. This quick and easy chicken stir fry recipe is bound to become a staple in your kitchen.
Ingredients needed for Chicken Stir Fry with Bell Peppers and Mushrooms
- Chicken Breast
- Bell Peppers
- Mushrooms
- Onion
- Garlic
- Ginger
- Olive Oil
- Soy Sauce
- Rice Vinegar
- Red Pepper Flakes
- Garlic Powder
- Salt & Pepper
How To Make Chicken Stir Fry with Bell Peppers and Mushrooms
Step One: Prepare Ingredients
Start by cutting your bell pepper, mushroom, onion, garlic and ginger, then set them aside. I have a trick for using ginger in my stir fry: I cut the ginger into 2 large pieces and cook with it as usual. Once the meal is done, I remove the ginger pieces. I do this because I love the flavor the ginger provides however, I hate biting into a piece of ginger while eating my food because it overpowers everything else. This way, I get the delicious flavor without the overpowering bite. Lastly, cut your chicken into 1 inch cubes and set aside.
Step Two: Stir Fry
Add olive oil to a large skillet or wok and heat over medium-high heat. Once the oil is hot, add the onion, garlic, and ginger, and fry until translucent and fragrant. Add the bell pepper and mushroom, and fry for 2-3 minutes. Lastly, add the chicken and cook for one minute. Then add soy sauce, rice vinegar, red pepper flakes, garlic powder, salt, and pepper. Cook for another 3-5 minutes, or until the chicken is cooked through. Serve with rice and enjoy!
Chicken Stir Fry with Bell Peppers and Mushrooms
Ingredients
- 1 large chicken breast cut into 1 inch cubes
- 1/2 red bell pepper cut into long thin strips
- 1/2 yellow bell pepper cut into long thin strips
- 1 cup mushrooms cut into 1cm thick pieces
- 1/2 large onion cut into long thin pieces
- 4-5 garlic minced
- 2 tsp ginger *refer to "step one" for my tip on using ginger in stir fry
- 2 tbsp olive oil
- 1/8 cup soy sauce
- 3 tbsp rice vinegar
- 1/2 tsp red pepper flakes
- 1 tsp garlic powder
- salt & pepper to taste
Instructions
- Add olive oil to a large skillet or wok and heat over medium-high heat
- Add onion, garlic, and ginger, and fry until translucent and fragrant
- Add bell pepper and mushroom and fry for 2-3 minutes
- Add chicken and cook for one minute. Then add soy sauce, rice vinegar, red pepper flakes, garlic powder, salt and pepper. Cook for another 3-5 minutes or until chicken is cooked through.
- Serve with fresh rice and enjoy!
