Chicken Stir Fry with Bell Peppers and Mushrooms
This easy chicken stir fry recipe can be made in less than 30 minutes, making it a perfect weekday dinner idea.

- 1 large chicken breast cut into 1 inch cubes
- 1/2 red bell pepper cut into long thin strips
- 1/2 yellow bell pepper cut into long thin strips
- 1 cup mushrooms cut into 1cm thick pieces
- 1/2 large onion cut into long thin pieces
- 4-5 garlic minced
- 2 tsp ginger *refer to "step one" for my tip on using ginger in stir fry
- 2 tbsp olive oil
- 1/8 cup soy sauce
- 3 tbsp rice vinegar
- 1/2 tsp red pepper flakes
- 1 tsp garlic powder
- salt & pepper to taste
Add olive oil to a large skillet or wok and heat over medium-high heat
Add onion, garlic, and ginger, and fry until translucent and fragrant
Add bell pepper and mushroom and fry for 2-3 minutes
Add chicken and cook for one minute. Then add soy sauce, rice vinegar, red pepper flakes, garlic powder, salt and pepper. Cook for another 3-5 minutes or until chicken is cooked through.
Serve with fresh rice and enjoy!
