Preheat Air Fryer to 350°F.
In a medium shallow bowl, whisk together the eggs and set aside. In another shallow bowl, combine panko crumbs, garlic powder, chili powder, salt and pepper and mix well.
Coat the chicken pieces in the beaten eggs, then dunk them into the panko mixture. Repeat twice.
Line the air fryer basket with foil and spray with nonstick oil. Place chicken onto the foil. Season chicken again with garlic powder, chili powder, salt and pepper. Finish by spraying the chicken with a light coat of nonstick oil to ensure it gets golden in the air fryer.
Cook in the air fryer for about 10-12 minutes or until chicken is golden brown and the internal temperature reaches at least 165°F.
While chicken cooks, in a small bowl, combine ketchup, soy sauce, Worcestershire sauce, and pepper to create chicken katsu sauce.
Serve your chicken katsu bites with fresh rice and the sauce. Enjoy!
