This easy carrot and cabbage slaw is a vibrant side dish perfect with any meal. Made with only a few ingredients and dressed in olive oil and apple cider vinegar, its simple to prepare yet very satisfying.

Ingredients
  

  • 1/2 Cabbage sliced into long, thin strips
  • 2 large Carrots shredded
  • 1/2 large Yellow Onion sliced into long, thin strips
  • 2 tbsp Olive Oil
  • 2 tbsp Apple Cider Vinegar
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Instructions
 

  • In a large bowl, combine the sliced cabbage, onion, and shredded carrots. Drizzle with olive oil and apple cider vinegar, then season with salt and pepper to taste. Mix well to ensure all ingredients are evenly coated.
  • Refrigerate for at least an hour before serving. For best results, refrigerate overnight and enjoy!
